Speaker: Alberto Caminero, PhD, Assistant Professor, Farncombe Family Digestive Health Research Institute, Division of Gastroenterology, Department of Medicine, McMaster University
Title: “Microbial antigen metabolism in food sensitivities”
It is estimated that one-fifth of the population world-wide experiences adverse reactions to foods. The prevalence of common food sensitivities such as food-allergy and celiac disease have increased in the last decades, suggesting a role for environmental factors. The role of microbes in the onset and course of these sensitivities has been proposed. Here, I will talk about mechanisms by which gut microbes influence food sensitivities. Specifically, I will show the relevance of dietary antigen metabolism by the intestinal microbiota in celiac disease and food allergy. Understanding microbial mechanisms implicated in adverse reactions to foods will help in the development of new preventive and therapeutic strategies.
